DUBAI: Octopus is chock full of key nutrients, including trace minerals – such as zinc and copper – as well as vitamin B12. Like nearly all seafood, octopus is lean and low in calories, which makes it the ideal dish to incorporate into your iftar meal. Below, Chef Salvador Carrillo, from Dubai’s NIDO and Moe’s on the Fifth restaurants, shows us how to prepare a simple and flavorful grilled octopus dish.
Ingredients:
Octopus
Fresh lemon
1 tablespoon garlic sauce
1 tablespoon pickle pepper
1 teaspoon worcestershire sauce
1 teaspoon balsamic vinegar
1 full shallot, chopped
1 tablespoon lemon juice
Salt and pepper
Smoked paprika
Directions:
1. Boil octopus for three hours, until octopus is tender, then prepare for marinating.
2. To create your marination, mix a squeeze of fresh lemon, garlic sauce and pickle pepper along with one teaspoon of Worcestershire sauce, one teaspoon of balsamic vinegar, one full shallot chopped and one teaspoon of lemon juice.
3. Add a hint of salt and pepper and a hint of smoked paprika to taste.
4. Spread mixture over boiled octopus.
5. Grill marinated octopus for five minutes on each side.
