Park Hyatt Jeddah is inviting guests to spend the day interacting with its expert Moroccan chefs to discover Marrakesh’s most popular dish “tanjia.” The event, “Tanjia Night,” will be held every Monday at the Andalusia restaurant from 7 p.m. until midnight.
Starting from Andalusia with a refreshing blend of its signature cocktail, Park Hyatt Jeddah’s chef will narrate the history behind making this unique and special dish.
Just like its name, “tanjia” is prepared in a clay pot for the purpose of slow cooking. Rather than cooking the meat at home, the “tanjia” would be brought to an oven, where it would sit in the ashes of the wood fires burning underneath.
The dish includes simple yet flavorful ingredients that are mixed carefully and sealed in the clay pot. Historically known to be prepared by the men of the household, “tanjia” is also known as the “bachelor’s stew.” The minimum cooking time for “tanjia” is five hours at the end of which the meat is tender, juicy and tasty.
